Set aside 5 cherries from the Lucky Leaf® Premium Cherry Fruit Filling & Topping. Pour the rest of the can into a large bowl with cake mix; mix together, by hand or with a blender. Spoon the batter into ramekins (5 6 oz. ramekins will work well), and cook according to the cake directions. Set aside to cool.
Whip heavy cream with sugar and orange juice, until soft peaks form. Add 4 drops of red food coloring, and 8 drops of yellow, to the cream; mix with a spoon.
When the cakes are completely cooled, spoon whipped cream on top until covered. Sprinkle almonds and coconut on top. Add reserved cherries to the center of each cake.
